Chicken Fettucini Alfredo


Love this dish, quick simple yet tastes very clever. I cook this for friends and family and they all love it!!

Chicken is a low fat versatile meat that can be flavored to accompany almost any dish. It is quick and easy to prepare, reasonably priced and ideal for a family meal. The sun dried tomatoes add a sweet and juicy twist making this dish truly amazing.


For this recipe you will need -


2 chicken breasts (with the skin removed)

1 clove garlic (crushed)

A generous portion of sun dried tomatoes ( usual found in a jar with oil)

2 tablespoons olive oil


Cut the chicken breasts into cubes and place in a shallow frying pan with the oil and garlic. Cook on a medium heat, stirring occasionally until the chicken is thoroughly cooked through. Add the sun dried tomatoes to the pan and heat gently for 1 -2 minutes.


and for the alfredo sauce:


1/2 cup butter

A pint of   cream (whipping cream is best!)

2/3 cup Parmesan cheese, freshly grated

1 table spoon of garlic powder

A hint of salt

ground black pepper (add to taste)

pinch cayenne pepper

1 lb. fettuccine pasta

Fresh parsley finely chopped


Prepare the fettucini pasta instructed on the packaging, alternatively why not make your own pasta using my recipe here. When the pasta is ready drain it; melt a knob of butter on the hot pasta or stir in several drops of olive oil to keep pasta from sticking. Stir to coat evenly.

To make the sauce, melt the butter over a low heat, stir in the cream, garlic powder, and cayenne pepper.

Simmer 20-30 minutes over low heat, stirring constantly until a smooth sauce develops.

Season with salt to taste.

Remove saucepan from stove and stir in Parmesan.
